1 tablespoon butter or olive oil spread, melted
3/4 cup wholemeal Self Raising flour
1/2 cup oats
1/2 desiccated coconut
2 tablespoons ground flaxmeal
1 teaspoon vanilla extract
2 tablespoon sugar
Passion fruit Topping:
1 cup vanilla yoghurt
2 passion fruit
2 tablespoon chia seeds
Lemon Passion Fruit Curd (optional):
1/8 cup sugar
2 egg yolk
1 lemon, juiced and zested
2 passion fruit
Pre-heat an over to 180 degrees and spray a slice tin lightly with olive oil spray.
Base: Place banana, flour, oats, coconut, flaxmal, melted butter, sugar and vanilla in food processor on high for several minutes until mixture is well combined and begins to come together. Press the mixture into greased slice tin and bake in pre-heated oven for 15 mins. Set aside and allow to cool.
Passion fruit topping: Turn the oven down to 150 degrees. Mix vanilla yoghurt, passion fruit and chia seeds together in a small bowl and spread over the cooled base and bake for a further 30mins or until the yoghurt has somewhat set (very small cracks will appear). Remove from the oven and allow to cool before slicing.
Lemon and Passion Fruit Curd (optional, and also delicious on toast, scones, pancakes etc.):
Place butter in a small saucepan over a low heat until melted. Add sugar and whisk until dissolved. Whisk in yolk, lemon juice, zest and passion fruit and continue to whisk until creamy and begins to thicken. Remove from heat, allow to cool and store in a sterilised glass jar in the fridge. Add cooled curd to slice when serving as desired.
