Its Recipe Redux time again and this month is dedicated to drinks and although summer is just about over I'm not quiet ready to say goodbye yet.
This Ginger Passion Punch has all the beautiful flavours of summer with the added nutritional benefits of fresh ginger. Ginger is said to aids digestion, reduce pain and inflammation, treat nausea, reduce blood pressure, aid menstrual pain and treat migraines. (1, 2, 3, 4) The ginger also adds a lovely subtle flavour to this drink that is fresh, crisp and cleansing - this punch is the perfect accompaniment to a Healthy Summer BBQ.
1 litre of water or sparkling water
2 passion fruit, pulp
1 orange (reserve zest)
2 - 4cm piece fresh ginger, chopped
4 - 5 lychees, peeled and de-seeded
Fill a large jug with water or sparkling water. Use a jug with a filter to remove 'bits' if desired.
Place passion fruit pulp, lychees, ginger, orange zest and the flesh in a food processor on high for several seconds until ingredients chopped and combined. Add water to the food processor and pulse to combine thoroughly. Place the punch in the fridge overnight. Serve and enjoy chilled.
