1 large orange
1 cup of oats
1 cup Self-raising flour
2 tablespoons honey
1 teaspoon bi-carb soda
1/2 cup desiccated coconut
1/2 cup pitted dates chopped
1 tablespoon olive or canola oil (or butter)
Pre-heat an oven to 180 degrees.
Remove the zest from the orange and set aside. Cut the remainder of the orange into wedges and remove the skin. Place in a food processor on high until liquefied.
In a large mixing bowl place oats, flour, orange zest, chopped dates and coconut. Combine well. In a microwave safe bowl heat honey (and butter) until melted. Mix oil and orange into the honey and add bi-carb soda. Continue mixing until it foams. Combine honey and orange mixture with flour mixture. Dough should be moist but not wet. If it is too dry and a little extra oil or honey.
Roll into small balls, press flat and place on a greased biscuit tray. Bake in pre-heated oven for 15 mins or until golden. Biscuits will harden slightly as they cool.
