C’mon who doesn’t love a good meatball? But which is your favourite, Sundried Tomato and Basil or Craisin and Rosemary? Steggles loves the idea of using their Lean Chicken Mince as a substitute for other varieties of mince and given that chicken is mildly flavoured it's really versatile and relatively inexpensive, so a good staple to keep on hand. Steggles Lean Chicken mince is 100% chicken breast and thigh (Steggles chickens are also hormone, steroid and antibiotic free), which also makes it a leaner option (less than 10% fat) than some other mince varieties - plus it is only $11 a kilo (2 x 500g packs) at Coles. Steggles have come up with some great recipes on their website like Chicken Minestrone, Chicken and Vegetable Pie, Chicken Nachos and Tacos, Chicken Bolognese and heaps more (check’em out) but have asked me to help them out with a few more ideas. I have come up with 2 different meatball dishes but the jury (my 3 kids, hubby doesn’t get a vote because he’s fussy!) are still out on which they prefer, so I am handing it over to you to vote for your favourite Meatball recipe. Method: Pre-heat an oven to 200 degrees and lightly spray a baking dish with olive oil. Place all ingredients in a medium mixing bowl and combine well. Press into tablespoon sized balls and place in greased baking dish (for a smoother looking ball, use wet hands). Bake for 20 – 30 mins until the meatballs are cooked thoroughly.
