Nice Recipe #5: Bailey Rocks
2 teaspoons coffee (or replace with 1 extra teaspoon of cocoa)
1 teaspoon cocoa
100ml reduced fat coconut cream (or reduced fat heavy cream)
75ml reduced fat evaporated milk
*Sugar to taste
In a small saucepan over a very low heat mix together coconut cream, evaporated milk, coffee and cocoa (add sugar if desired). Continuously stir until smooth and creamy but do not let it boil. Remove from the heat and allow to cool. Once it is cooled portion out into an ice cube tray and place in the freezer for several hours until set.
To serve, place several ice cubes in a glass and top with a shot of whisky and/or milk.
*Once the mixture has cooled whisky can be added if desired, however it will not freeze solid. Alternatively, baileys can be placed in a bottle and stored in the fridge for up to 2 months.
To make a child friendly version, replace coffee with additional cocoa and omit whisky.
