Peppercorn Food Company Competition (Sponsored)
5 Peppercorns Extra Lean beef sausages
1 green apple
1 cup of water + 1-2 tablespoon extra
2 teaspoons of soy sauce (reduced salt)
2 tablespoons of tomato paste (no added salt)
2 tablespoon of Worcestershire sauce
1 teaspoon of mustard
1 tablespoon corn flour
1 tablespoon brown sugar
Whisk together brown sugar, mustard, worcestershire, soy sauce, corn flour and water in a small mixing bowl and set aside.
Slice onion into thin rings, quarter the apple, remove the core and thinly slice.
Heat 1-2 tablespoon of water in a large fry pan, add sausages and poach evenly on all sides until just cooked. Remove the sausages from the pan and chop into bite sized slices and set aside (don’t worry if the sausages are under cooked as they will be returned to the heat).
Add the onion to the frying pan and sauté until soft. Add sausage and apple slices to the pan and pour over the sauce mixture. Allow to simmer, while stirring, for 5 minutes or until the sausage is cooked thoroughly and sauce has slightly thickened.
Serve with mashed sweet potato and steamed vegetables.
