- 1 can of Chickpeas (drained and rinsed well)
- 2 cloves garlic coarsely chopped (or 2 tablespoons of minced garlic),
- 1/4 cup fresh lemon juice
- 1/4 cup sun-dried tomatoes, finely minced
- 2 tablespoons of the oil from the sun-dried tomatoes (or olive oil)
- 2 teaspoons ground cumin
Place chickpeas, garlic, cumin and lemon juice a food processor and puree until smooth. Add small portions of the oil slowly and mix well after each addition.
