These little frozen treats have all the joy of a cheese cake, with a fraction of the fat and sugar. Making bite size portions is also a great way to help avoid over indulging. Enjoy!
6 shredded wheat or plain sweet biscuits 1/2 a Banana 1 cup 80% reduced fat cream cheese 1 cup low fat vanilla yoghurt 1 teaspoons lemon juice Fresh or frozen fruit to serve (berries, banana, kiwi fruit)
Filling: Whist together cream cheese, yoghurt and lemon juice until smooth, with no lumps. Spoon mixture on top of biscuit base in patty pans.
Base: Crush Biscuits in a food processor until finely crumbed. In a medium mixing bowl mash the banana until smooth, mix in the biscuit crumbs. Mixture should stick together when pressed.
Line a muffin tray with patty pans and press biscuit mix into the bottom.
Freeze for 15 -20, or until ready to serve. Remove from the freezer, allow to soften slightly and decorate with fresh fruit.
