250g sweet potato, peeled and chopped in 1cm cubes
300g brown rice, cooked as per instructions
1/2 cup sultanas
1 tablespoon Moroccan seasoning
25g baby spinach
1/2 green capsicum, chopped
*Optional - grilled chicken, chopped or shredded
Spray an oven tray with oil and roast sweet potato in a hot oven (about 200 - 220 degrees) for about 30mins or until starting to crisp on the outside. Mix all ingredients together and enjoy as a side salad or add chopped or shredded grilled chicken and enjoy as a complete meal - great for lunchboxes!
