1 cup of dried dates
¼ cup boiling water
1 tablespoon of butter or margarine
1 cup Self Raising Flour
¼ cup brown sugar
1 teaspoon of vanilla extract
1 teaspoon cinnamon
Chop dates and place them in a bowl with boiling water and set aside.
Use a hand mixer to cream butter/margarine with sugar. Add eggs, vanilla and cinnamon and continue to mix until creamy. Fold through flour and date mixture. Place mixture into greased mini muffin tray.
Place muffin tray in an oven pre-heated to 180 degrees, for 20 mins or until golden.
