Well its Recipe Redux time again! And this months theme is all about Raising the Bar on Foods in a Jar. And I had just the recipe for the occasion - Raw Buckwheat Porridge with berries.
This recipe is not only a power house of nutrition to start the day, its perfect for these unseasonably warm morning, as unlike a traditional porridge this tasty dish is serves chilled with fresh fruit (I prefer berries, which also happen to be in season) and a dollop of yoghurt.
Combine buckwheat, coconut milk, chia seeds and cinnamon in a jar and allow to sit in the fridge overnight preferably, or at least until the liquid has absorbed and porridge slightly chilled. Divide a layer of porridge among bowls and top with yoghurt and berries. Add a second layer of porridge, top with berries and garnish with coconut and nuts.
