Ingredients: 1 1/2 cups self raising flour 1 teaspoon cinnamon 1 teaspoon nutmeg 1 cup frozen raspberries 1/2 cup frozen blue berries 1/2 cup rolled oats 1/4 cup pepitas 2 large bananas 2 eggs 1/2 cup low fat milk
Method: In a large mixing bowl combine flour, nutmeg, cinnamon, oats, pepitas. In a food processor (or by hand) blend bananas and eggs together until very smooth and creamy. Pour the banana and egg mix into the dry ingredients. Add berries and fold through. If the batter is too thick (this will depend on the size of the bananas), add a small amount of milk and combine. The mixture should be very moist, but thick enough not to be runny. Place batter in a greased loaf tin and bake in a pre heated oven at 160 degrees for 50 mins or until a skewer entered in the centre comes out clean. Allow to cool in the tin before turning out and serving.
