Cut a fresh pineapple into chunks, removing the skin and core. Cube a mango and place in a blender or food processor with the pineapple. (You could also add a banana for a creamy texture, a touch of coconut milk/cream, and if you really wanted to be healthy a handful of washes baby spinach) Blend/process until liquefied, then pour into a container and place in the freezer. When it is about half frozen (this will take several hours), remove from the freezer and break frozen sections into fine chips with a spoon. Place back in the freezer for about another hour, then break apart again until it is all chipped finely. You could use the food processor/blender to do this but I find it melts too much.
Place in a cup and serve. Feel free to add a touch of Malibu (coconut run) for the grownups – summer in a glass!
