50g butter or margarine
1 cup chopped dates
1/2 cup boiling water
1 orange, juice squeezed and zested
1.5 cups self raising flour
Pre-heat an over to 180 degrees
Place dates in a small bowl and cover with hot water and orange juice and set aside.
Use and electric beater to cream butter until light and fluffy. Add banana and continue to beat until well combined. Add egg and beat again until combined. Mix through dates including all liquid. Fold through flour and orange zest.
Place batter in a greased loaf tin and bake for 15 - 20 mins or until golden and firm in the centre. Allow to cool slightly before turning out and slicing.
