Nice Recipe #7: White Christmas
Been dreaming of White Christmas? - Dream no long. Indulge and enjoy this 'Nice' version of the Christmas favourite without worrying about all those empty calories that come with the traditional version. Super simple and easy, with all the classic flavour.
2 cups rice bubbles (or any puffed grain - puffed millet, corn, wheat, amaranth)
1/2 cup desiccated coconut
1 tablespoon coconut oil, (or butter or oil spread)
50g coconut milk powder (or skim milk powder)
3 tablespoons low fat vanilla yoghurt
1 teaspoon vanilla extract
1 cup craisins and/or dried blueberries and/or dried goji berries
Line a 20x30cm tin with baking paper. Combine rice bubbles, coconut, and dried fruit in a large bowl.
Melt coconut oil and stir together with milk powder, yoghurt and vanilla. Add yoghurt mixture to rice bubble mixture and combine well.
Press into the tin and set in the fridge for several hours. Cut into 24 fingers. Store in an airtight container in the fridge.
