Nice Recipe #4: Craisin & Pistachio Short Bread
A glass of milk and a piece of shortbread is a fairly standard snack for Santa, but no need for him to take a polite bite and leave the rest on the plate - this 'Nice' version has all the flavour and soft crumbly goodness of a traditional shortbread without being quiet so 'Naughty.'
½ cup rice flour
½ almond meal (optional, replace with flour of choice)
1 cup Self raising flour
1/2 cup icing sugar (or sweetener suitable for baking)
1 teaspoon Vanilla extract
2 tablespoons olive oil spread or butter, softened
1/4 cup of milk of choice (dairy, rice, almond, soy)
100g Pistachios (optional)
¾ cup Craisins (optional)
Line a cake tin with baking paper and spray with oil to grease. Pre-heat an oven to 160 degrees.
Place flours, almond meal and icing sugar in a large bowl and combine. Add vanilla extract and oil spread or butter to flour mix. Rub the oil spread or butter into the flour until it resembles bread crumbs. Add small amounts of milk, combining after each addition until the mixture comes together to form a dough. Add craisins and pistachios and knead through dough.
Roll out and press the dough into prepared tin. Prick with fork and use a butter knife to score the dough into desired serving portions. Bake in pre-heated oven for 40 mins or until golden.
