This Pizza (Right) makes a delicious, healthy vegetarian alternative to traditional pizza.
1 Quantity of Basic Pizza Dough (Makes 2 Pizzas)
1 onion diced
1 clove of garlic (or 1 tablespoon of minced garlic)
1 tablespoon of Taco Seasoning (sodium reduced if possible) or mix 1/2 tablespoons sweet paprika, 1/2 teaspoons oregano, 1/4 teaspoons cumin, chili powder to taste
1 Red Capsicum, de-seeded and chopped
3 large tomatoes, chopped
1 Can of borlotti beans, drained and rinsed or 1 can of No added Salt Baked Beans
A large handful of baby spinach (washed)
3/4 Cup Cheese (tasty or mozzarella)
Avocado Topping (Optional)
1 Avocado mashed with a squeeze of lemon juice
In a non stick pan (or pan sprayed lightly with oil), cook onion and garlic on medium heat for 5 mins (or until soft). Add capsicum, tomatoes and seasoning. Cook for a further 5 mins. Add Beans and spinach, mix through thoroughly and allow spinach to wilt.
Place rolled out Pizza Dough on oven/pizza tray and top with Bean Mix and top with cheese.
Bake at 180 - 200 degrees for about 20 mins (or until cheese melted and base just brown). Add Avocado topping just before serving (optional)
