1x 420 can chickpeas, rinsed and drained
3/4 cup unhulled tahini
1/2 cup honey
1/2 cup desiccated coconut
2 tablespoons Cacao (or cocoa)
1/2 cup self raising flour
Place chickpeas, honey and tahini in a food processor and puree until smooth. Add flour, coconut and cacao and mix well. Dough should be able to be rolled into balls without being sticky or crumbling (if dough it too dry add a little more honey, if it is too wet add a little more flour).
Roll small amounts of dough into balls and press flat with your palm. Place biscuits on a greased oven tray and bake at 180 degrees for 15 - 20mins.
(Half of my dough strangely went missing whist making these - the dough is pretty tasty and could be used as a spread, dip or rolled into balls - for this it would be nice to finish the balls rolled in extra coconut)
