Nice Recipe #1: Berry Punch
My clever little daughter came up with this punch last year and now that the weather is starting to warm up, I thought I'd share her recipe with you all. It makes for a perfect healthy alternative to juices or cordial and looks just a tad special. A jug of this in the middle of the table makes for a beautiful centre piece.
If you are not keen on drinking all the 'lumpy' bits, simply serve from a filtered jug or water bottle - a perfect idea for school lunchboxes.
1 cup of water per person
Frozen pomegranate seeds
Cucumber, sliced and quartered
Lemon or lime wedges
A handful of fresh mint leaves
Simply throw it all in a jar or jug and chill for several hours or over night.
