The Kids Menu and Loving Lunches have teamed up to give your
classic Christmas recipes a Naught and Nice twist. We have a new
Naughty and Nice recipe for each day of the week - So whether you're Naughty or Nice this Christmas, we've got recipes for you!
Nice Recipe #5: Bailey Rocks
A traditional Baileys recipe, jam packs a whole lot of 'naughtiness' into one little drink, but this 'Nice' twist on a Christmas classic, is not only perfectly chilled for a hot summer day, but also a whole lot healthier. Alcohol is completely optional, so the kids can enjoy this too.
2 teaspoons coffee (or replace with 1 extra teaspoon of cocoa)
1 teaspoon cocoa
100ml reduced fat coconut cream (or reduced fat heavy cream)
75ml reduced fat evaporated milk
*Sugar to taste
In a small saucepan over a very low heat mix together coconut cream, evaporated milk, coffee and cocoa (add sugar if desired). Continuously stir until smooth and creamy but do not let it boil. Remove from the heat and allow to cool. Once it is cooled portion out into an ice cube tray and place in the freezer for several hours until set.
To serve, place several ice cubes in a glass and top with a shot of whisky and/or milk.
*Once the mixture has cooled whisky can be added if desired, however it will not freeze solid. Alternatively, baileys can be placed in a bottle and stored in the fridge for up to 2 months.
To make a child friendly version, replace coffee with additional cocoa and omit whisky.
Now its time to head on over to Loving Lunches and check out the Naught version - but remember Santa knows if you've been Naught or Nice! ...
