1 large apple or 2 small apples, peeled and chopped
100g pumpkin, skin removed and chopped
1/4 cup boiling water
1 table spoon brown sugar
2 teaspoons cinnamon
In a large microwave pot place chopped apples and pumpkin. Dissolve brown sugar in boiling water and add to apple and pumpkin. Microwave on high for 5 min. Remove from the microwave and mash (for a lumpy texture) or puree with a food processor (for a smoother texture). Mix through the cinnamon and return to the microwave for 2mins or until it has reduced and is thick. Allow to cool and store in a container or jar in the fridge. Use in place of jam, top yoghurt and muesli, use in place of oil when baking sweets (muffins, scones, cakes)
