1 cup Iceberg Lettuce
80g baby spinach leaves, washed and drained
1 cup cucumber, halved and sliced
2 peaches, stone removed and cut into wedges
1/4 cup sunflower seeds
1/4 White wine vinegar
2 tablespoons warm water
1 teaspoon sugar (optional)
(Dressing) Whisk together sugar and warm water until dissolved. Add white wine vinegar and combine well.
Toss together all salad ingredients, garnish with mint leaves and drizzle with dressing.
