3 cups of rolled oats or an untoasted muesli
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup flaxseeds
2 teaspoons cinnamon
1/2 cup honey
1/2 cup unhulled tahini
2 tablespoons light (in favour) olive oil
Mix all dry ingredients together in a large bowl. Place honey, tahini and oil in a saucepan (or microwave pot), and stir over a low heat until melted (microwave on high for 20 seconds, stir if not melted, return to microwave for another 10 seconds). Pour honey mixture over dry ingredients and mix well.
Place mixture in a lined baking tray, smooth out and pack firmly with the back of a hot spoon (place the spoon in a cup of hot water for a few seconds).
Or, pack mixture into a square/rectangle cookie cutter or a greased baking tray. Once mixture is packed firmly and flat on top, remove the cutter and repeat process.
Bake in a pre-heated oven at 160 degrees for 20-30 mins, allow to fully cool before cutting.
