1/3 cup brown sugar
1 teaspoon vanilla bean paste
3 cups self-raising flour
1/4 teaspoon bicarbonate of soda
1 cup reduced fat sour cream, plain yoghurt or ricotta with 1 tea spoon of lemon juice
3 mashed very ripe banana
1/2 cup reduced fat milk*
In a food processor, blender or with a hand mixer combine bananas, eggs, vanilla and sour cream/ yoghurt until smooth. Add bicarbonate soda and whisk through until dissolved. Set to the side and allow to bubble.
In a separate large mixing bowl, combine flour and sugar. Pour banana mixture into flour mix and fold through until well combined.
*if the mixture is too dry add small amounts of milk
Place mixture into a greased cake tin and bake in a pre-heated oven at 160 degrees for 1 hour or until a skewer inserted in the centre comes out clean.
