1 cup plain flour
1 cup oats
1/2 cup desiccated coconut
1/2 cup brown sugar
1 teaspoon cinnamon
1/3 cup sunflower seeds
2 tablespoons of butter or margarine
2 table spoons of honey or golden syrup
1 table spoon unhulled tahini
1/2 teaspoon bi carb soda
2 tablespoons water
Preheat oven to 180 degrees and grease a baking tray
Combine flour, oats, sugar, coconut, cinnamon and sunflower seeds in a large bowl. Mix together until well combined.
In a microwave safe bowl or on the stove top melt honey, butter and tahini together. Remove from heat and add water and bi carb soda, mixing together until bi carb is dissolved and ingredients well combined.
Add wet mixture to flour mixture and stir together thoroughly. Dough should stick together when pressed lightly but not be wet or crumbly (add more water if dry, add more flour if wet)
Roll dough into tablespoon sized balls and press flat on the tray.
Bake for 15 minutes or until golden. Biscuits will harden more once they have cooled.
