The school holidays have almost come to an end - and after a long 6 weeks home with my children, I think this is cause to celebrate! So how about a Pizza Party! This months Recipe Redux is all about giving the delivery guy a night off and partying with pizza. Once of the reasons I love pizza so much is it really does bring people together, so perfect for a party and despite the bad reputation pizza can be a really healthy family meal choice. We have homemade pizza every week and it is one of my kids favourite meals to help prepare. Leftover pizza and pizza scrolls often feature in my kids lunchboxes, it makes a great change from sandwiches and an easy way to get loads of veggies into your kids too. So here is my Pizza Party recipe, Gourmet Green Pizza or pizza scrolls. Gourmet Green Pizza / Pizza Scrolls Makes 2 large pizzas or about 24 pizza scrolls Base: 1 quantity of Basic Pizza Dough (see recipe) Pesto Sauce: 1 1/2 cups fresh basil leaves 2 tablespoons garlic (minced or fresh) ½ cup parmesan cheese, grated or chopped 4 tablespoons olive oil Topping: Olive oil spray 2-3 rashers of short cut bacon, sliced into strips (optional) 1 red onion, sliced 2 tablespoons garlic (minced or fresh) 2 tablespoons water 1 head of broccoli, very finely chopped 1 zucchini, grated 100g baby spinach leaves, rinsed and drained ½ cup mozzarella cheese Method: Step 1: Prepare pizza base as per recipe instructions (here) Step 2: To make pesto sauce place basil, garlic and parmesan cheese in a food processor on high until finely chopped, scraping sides down as needed. While the processor is still going, slowly drizzle in olive oil until well combined. Step 3: Heat a frying pan and lightly spray with olive oil. Add sliced bacon (optional) and sliced red onion and cook until onion is tender. Remove onion and bacon from the fry pan and set aside. Place water in the fry pan with the garlic. Add the broccoli and allow to simmer for several minutes, then add zucchini and baby spinach leaves. Continue to cook until the spinach has wilted. Use tongs to remove the mixture from the fry pan, leaving behind any excess liquid. Place in a bowl and set aside. Add 1 tablespoon of the pesto sauce and mix through. Step 4: Pre-heat the oven to 200 degrees. Dive the dough into 2 large balls and roll each out (one at a time if space is limited) on a floured surface until about ½ cm thick (roll it into a long rectangle shape for pizza scrolls). Place dough on to greased baking tray (** for traditional pizza only, for pizza scrolls continue working on the bench). Spread a layer of pesto sauce over the pizza dough, top with a good layer of the spinach mix and add a scattering of bacon/onion over the top. Sprinkle over the cheese. Step 5: For traditional pizza place in the oven and bake for 20 – 30 mins, until crust and cheese are golden. For pizza scrolls, carefully roll the length of the rectangular dough, tucking all the topping inside (to form a long snack shape), use a sharp knife to slice the rolled pizza into portions about 2cm thick. Turn the slices flat and arrange the slices on a well-greased oven tray leaving a little room between each one. Bake for 20 – 30 mins until golden. Pizza and scrolls are perfect for lunchboxes. Store in a container in the fridge for several days.
