The Kids Menu and Loving Lunches have teamed up to give your classic Christmas recipes a Naught or Nice makeover. We have a new Naughty and Nice recipe for each day of the week - So whether you're Naughty or Nice this Christmas, we've got recipes for you! Nice Recipe #2 : Mint BallsMint is a classic Christmas flavour, so grab yourself a big bunch of this fresh herb and put a healthy spin on this favourite Christmas recipe (although if mint is not your cup of tea, simply leave it out of this recipe for a delicious, healthy chocolate truffle). Ingredients: ½ cup buckwheat flour (place raw buckwheat groats in a food processor until a course flour) 1 cup of dates (plus boiling water to soak) 1 teaspoon vanilla ½ cup desiccated coconut ¼ cup fresh mint leaves, washed and dried (or replace with mint essence) 2 tablespoons cocoa 1 tablespoon honey Extra desiccated coconut for rolling Method: Place dates in a small bowl with enough boiling water to cover and allow to soak for several minutes. Place all ingredients in a food processor on high until well combined and smooth. Use a spatula to scrap down the sides as needed. Spread extra coconut on a plate. Place 1 – 2 tablespoons of the mixture on a plate and press out into a log and coat with coconut. Alternatively spoon small amounts of mixture onto the plate and roll through coconut. Refrigerate for several hours before slicing and serving. Now its time to head on over to Loving Lunches and check out the Naught version - but remember Santa knows if you've been Naught or Nice! ... Hi Jackie, so sorry I must have missed this comment last year!!! Ekkk so sorry. You could definitely give oat flour a go, it might just take a little adjusting to get the moisture right

These look delicious! What a great/healthy treat over Christmas. I recently made Chocolate Mint Slice Balls but I can tell you that they belong firmly in the naughty section.
